This is the easiest and fastest way to make Benedict Eggs with Hollandaise Sauce! Inspired by Shokugeki No Soma (Food Wars)
Bagel or Brioche
Egg (to poach)
1tsp White vinegar
For the sauce:
2 Egg yolks
Coconut Oil (or butter)
Salt & Pepper
Let's get started:
Roast the bacon in the oven or on a pan, I prefer the oven, for 15-20 min at 200°, you can also toast the bagel in the oven for 1 or 2 minutes or on a toaster if it fits.
For the poach egg: Put the egg in a fine strainer to get rid of the most liquid part and then heat up some water, add the vinegar and when you see small bubbles coming to the top, add the egg. It is important that the water is hot but not boiling, if it boils it might break the egg and we don't want that!! You can also wrap the egg in cling film instead but I recommend to do it without (check my video for a visual example).
For the sauce: Melt the coconut oil in the microwave, we need it to be hot. On a mixing bowl add the rest of the ingredients and start whisking it with an electric mixer for about 2 minutes. Start adding the coconut oil slowly while whisking it. You'll see that the consistency starts changing and becomes thicker, that's what we're looking for! If the coconut oil is not hot it might not work so be careful.
Add some hollandaise sauce to the bagel, then the bacon, the poach egg and more sauce on top. And it is ready to enjoy!
