Berry Pie from Snow White (V&GF)

Berry Pie but Vegan, Gluten free and sugar free, just fruit!

INGREDIENTS:

For the filling:

Strawberries

Blackberries

Grapes (for sweetness!)

1tbp Dates paste

Dash of lemon juice

Orange peel

Cinnamon sticks

1/4 cup water

Cornstarch or jelly

For the crust:

100g Coconut flour

100g Almond flour

100g Gluten free flour mix

Flaxseed egg (1 or 1 & 1/2)

1tbp Vegan butter

1tbp Dates paste

LET'S GET STARTED:

For the filling: Add all the ingredients in a pot and bring to boil. When the fruit melts, you can blend it and rinse the seeds out or keep it as it is. (If you blend it remove the orange and cinnamon sticks).  Let it boil until it thickens, and if after 15-20 min it is still really liquid, add some cornstarch or vegan jelly.

For the crust: Mix all the ingredients, if the dough is too dry add some water. If the dough is breaking too much maybe you need a bit more of flaxseed egg. Save in the fridge for 1h before rolling.

Roll the dough base into your mold and bake for 15' at 180º, remove from the oven and add the filling. Roll the rest of the dough on top and add any decoration you want with the same dough on top. Bake for another 15' at 180º or until it starts getting golden.

Let it cool down before eating so the pie filling is also more firm, and enjoy!
