Here's a super easy and different type of pizza. It is vegan and gluten free and the dough is made with broccoli.
I usually make my own pizza dough which is already vegan, and gluten free when using a free from flour, but what about a broccoli one? Well, turns out is really simple too! We just need some flaxseed, broccoli and flour, so let's make it!
INGREDIENTS: (2 small pizzas)
1/2 broccoli piece
50ml water + 2tsp ground flaxseed
1 cup Almond flour
1 cup Gluten free flour
1tsp baking powder
Garlic powder, paprika & salt
1/4 cup pine nuts, cashews or almonds
1 Garlic clove
Salt & pepper
1/2 cup Cashews
6-8 tbp Unsweetened plant milk
2tbp Nutritional yeast
1tsp Tahini (optional)
Garlic, salt & paprika
Violife mozzarella cheese
LET'S GET STARTED:
Wash and rinse the broccoli, dry it with a kitchen towel if necessary, it needs to be completely dry before blending.
Blend the broccoli and then add it to a mixing bowl with the flaxseed egg (for which you just need to mix the water with the ground flaxseed and stir and it is gonna get gummy really fast). Give it a mix and then add the almond flour and mix again. Finally, add the gluten free flour, spices and baking powder and finish kneading with your hands.
Knead the dough into the desired shape and bake for 15min at 180º. REmove from the oven and now it is time for the toppings.
Add some tomato sauce on the base and a vegan pizza cheese if you want (I added some extra Violife mozzarella but it is not necessary). Add the cashew sauce with a tablespoon as if it was some burrata cheese. Add cherry tomatoes, some extra basil leaves, and top it with some pesto.
Bake for another 10-15min at 200º. And it is ready to enjoy!
