When I tried this recipe for the first time, it turned out so creamy, light and delicious that I had to share it. I find it a super nice option to eat Cauliflower!

LET'S GET STARTED:
Cut the cauliflower and dress it with oil, salt, pepper and paprika. Bake in the oven with the spices for about 20min. The potato is optional, but I personally think it helps everything get lighter and creamier so bake it in the oven with the cauliflower if you want to add some.
In a pan, fry the onion and the garlic with some olive oil. Add the cauliflower and the potato to the pan, mix for 2min and then add the veggie broth.
Cook for 10-20min more and blend it. The last step is to add the Cream to make it lighter and creamier! You can do it without too, but I would recommend to add both the potato and the cream. If you do not have any plant based cream you can use any unsweetened plant based milk. Enjoy!
