This year Christmas was different so we made our own danish Christmas food for the first time ever and it was a success, so here's what we did!

INGREDIENTS: (for 2 person)

For the meat:

Pork loin (about 1kg)

Salt flakes

Bay leaves

For the sauce:

Juice from cooking the pork

1 cup of pork broth

Brown sauce coloring

2tbp butter

2tbp flour

For the potatoes:

25g Butter

80g Sugar

2 Cans of potatoes in water


Cut the skin of the loin meat in 1/2cm space between each cut, but do not get to the meat, just the skin.

Put salt down the cuts and some bay leaves in too. Put the pork on a tray and add some water (about 1/2 liter).

Put the pork in a cold oven and turn it on to 200º, let it cook for 1 & 1/2 hour. After that check if the skin needs more time to get crispy and add some time if needed.

Let the pork rest for 15 min before serving.

The sides:

For the sauce, add the butter in a pot an let it melt, then add the flour and stir together. Add the sauce coloring and then slowly add the broth and the juice from cooking the meat. If it is clumpy you can blend it.

For the potatoes, add the butter and the sugar in a pan at high heat and when the sugar melts, add the rinsed potatoes and cook for about 6-10 min, turn them around carefully.
