This recipe is an idea on how to use the leftover lemon syrup from the Lemon Cakes. Just a way to use it so you don't have to throw it away as the syrup is infused with lemon.
So I made some caramelized lemons with the same amount of water and sugar and used them in the recipe from Game of Thrones, Sansa's Lemon Cakes, and to not throw all the syrup I came up with this recipe.
Coconut cream (full fat)
Vegan lemon jelly
LET'S GET STARTED:
Blend the cookies with some butter to make the base of our little cakes, put it in the bottom of your mould.
Heat up the syrup a little bit in the microwave so it is liquid again. Put the thick part of a coconut cream can (a full fat one) and whip it while slowly adding half of the lemon syrup.
Mix the other half of the syrup with some vegan jelly (this is optional, as we're gonna freeze it anyway). Incorporate it to the coconut mix.
Add the mix into the mould and put it in the freezer until it gets solid. And it is ready to enjoy!
