Kolaczki (Polish Cookies)

Christmas Dec 03, 2020
This might be the best cookie, sweet treat, I've ever had. Incredibly delicious, come and see for yourself.

I didn't know this existed until some weeks ago, tried them because they looked super cute, but the flavor... OMG! They are sooooo delicious! Super easy to make, the dough is made with only 3 ingredients and you only need some jam to complete them.

So easy, affordable, 4 ingredients in total, what else could you ask for? Dig in!

110g (1/2 cup) Cream Cheese

150g (3/4 cup)  Butter (room temperature)

180g (1 + 1/2 cup) Flour

Jam (Apricot and strawberry)

Icing Sugar to top and decorate

Let's get started:

It is super simple, start mixing the cheese, with the butter and then star slowly adding the flour. Check if it sticks to your fingers, if it does, add a tinny bit more flour until it doesn't stick anymore.

Now it is time to let it rest. Leave it in the fridge for about 1 hour. This step is mostly so the dough gets colder which is gonna make the rest of the process way easier in terms of manipulating the dough.

Spread the dough on a baking sheet and cut squares about 6cm x 6cm (or any square size you want!). Put a small teaspoon of jam in the center of the piece, and fold 2 opposite corners into the middle (as shown in the image below). If you see that the dough is not sticking, use a little bit of beaten egg as glue.

Coat them with a beaten egg so they get golden and place them in the oven for 20 minutes, 180º.

Cover them with some icing sugar and enjoy them when they are still warm, they are amazingly delicious, try them and check for yourself! Enjoy!
