Lentil Stew (Spanish recipe)

Here's my grandma's recipe for traditional Spanish lentils with chorizo

1 Chicken breast (300g)

1/2 Chorizo (100g)

Brown lentils (250g when raw)

1 Onion

2 Garlic cloves

1/2 Bell pepper

1 or 2 Carrots

1 Big potato

1tbp tomato paste

2-3 Bay leaves

Salt, pepper, paprika

1/2 cup White wine

Broth cube (just 1, but optional)

Water (about 1l aprox)

In a big pot, fry the chicken and chorizo at a high temperature for 2 min. They need to change the color but not to fully cook. Remove them from the heat.

In the same oil (which should be orange-red by the chorizo), fry the onion and garlic for 3-5min and then add the bell pepper and fry for another 5min so everything get softer.

Add the spices, tomato paste, bay leaves and stir in for 1 min and then add the white wine and let it reduce. When it is not liquid anymore because the alcohol from the wine has evaporated, add the lentils, carrot and potato.

Add the broth and water and boil for about 30min (covered), or depending on how long you lentils need to cook for. Add water to cover everything, I like to add more than that as I like them more similar to a soup.

And it is ready to enjoy!
