It is Christmas time, and this Mince Pie is a tradition in the UK so let's make it Vegan and Gluten Free, shall we?
I made an easy and simple version, so it might not be the same as an original Mince Pie, but my idea was to make it really approachable, so anyone could make it at home from any part of the world. So you can add more dried fruits of choice.
Ingredients: (Aprox 4 pies)
For the filling:
1tbp lemon juice
1tbp orange juice
Orange and lemon peel
2tbp Brown Sugar
2tbp Soya Butter
For the crust:
1 cup Almond flour
1 cup Gluten Free flour
2tbp Soya butter
Let's get started:
This recipe is really easy, so first of all throw in a pot all the ingredients for the filling and let them cook for at least 10-15 minutes, cook them depending how soft you want the apple to be. I personally like it super tender.
You can optionally add some Brandy in and let the alcohol evaporate.
Blend the dates with a tinny bit of water to create a dates paste. Mix the flours, the butter and the dates paste until you get a thick dough. Add more butter or coconut oil if needed. Meanwhile cut some stars to cover the pies.
Roll the dough and cut circles to make the base and bake for 10 minutes 180º. Fill them up with the fruit mix (mince meat) and cover with the stars. Put back in the oven for 10 minutes more, 180º.
Decorate with some icing sugar and it is ready to enjoy!
