Here's this amazing Austrian recipe from Fantastic Beasts and where to find them, and on a super easy Vegan version!
I versioned this recipe from a Little Austrian Cookbook I have, making it Vegan just by switching the butter for a vegan one. You can also add nuts like pecans in it but the original one is without.
You can also make the pastry yourself but I decided to use filo pastry as that's the one they use in the movie.
INGREDIENTS: (For a small one)
2 Apples +1 for the roses
3 tbp Rum
3 tbp Raisins
1 dash Lemon
1 pinch Cinnamon
Vanilla sugar or extract
60g Vegan butter
LET'S GET STARTED:
Peel, quarter and core the apples, then cut them into thin slices nd transfer to a bowl with a dash of lemon juice.
Add to the bowl, the rum, raisins, cinnamon, vanilla and sugar and stir everything together (you can add some pecans if you want but that is optional).
On a pot, melt the butter and fry the breadcrumbs in it for about 2 min or until golden, and then let them cool down slightly and then add them to the bowl with the apple.
Take the filo pastry, brush all over with melted butter and spread the apple filling in the center of the pastry and then close the sides. Brush the next filo pastry layer with more butter on the borders and close, repeat for as many layers as you'd like. I used about 5-6.
Turn upside down so the ends are down and it can't get opened in the oven. Decorate with some pastry braids and bake in the oven at 180º for 30-40 min.
For the decoration roses, cut an apple in half and slice it as thin as you can, mix straight away in a bowl with water and a dash of lemon juice.
Put the bowl in the microwave for 3 min so it softens a little bit, then add 3 or 4 slices one next to the other and roll them (see the video below).
Decorate the Strudel and dust with icing sugar on top, and ready, enjoy!
