From Game of Thrones, Sansa's favorite treat, but vegan and gluten free
This recipe calls for caramelized lemon slices on top, that's why the cake itself doesn't have much sweetener, so feel free to add more if you think it needs more or if you're not gonna make the lemon slices on top.
I made them with a small amount of sweetener just because the slices have a lot of sugar in them already. Also, you wan save the syrup that is gonna be left from the caramelized lemons to use in other recipes. I made an iced dessert out of it.
For the dough:
½ cup Vegan butter or oil
2 Flaxseed eggs (50ml water + 2tsp ground flaxseed)
1 Lemon juice & zest
1tsp Vanilla extract
¼ cup of Vegan yogurt
2tbp Maple syrup
1tsp Baking powder
1 cup Gluten free flour
1/2 cup Almond flour
1 cup water
1 cup sugar
LET'S GET STARTED:
For the lemons: Cut the lemon in thin slices. In a pot, add the same amount of water and sugar and the lemon slices and bring to boil. When it boils turn the heat a bit down and let it simmer for at least 15min. Save for later.
You can save the syrup remaining in the pot for another recipe, I used it to make an iced dessert.
For the cakes: Melt the butter and mix it with all the "liquids", the lemon juice and zest, the maple syrup, the flaxseed egg, vanilla and yogurt.
Slowly incorporate the baking powder and the flours and whisk together.
Put in cupcake molds and bake for 25 min at 180º.
Remove the cakes from the mould and keep them upside down. Add a slice of the caramelized lemon on top and coat with icing sugar if you want. Enjoy!
