Here's the first recipe I made for a series called Movie Monday, where I recreate food from movies, and this one is from The Emperor's New Groove! It is Kronk's Spinach Puffs, but VEGAN!
For this Vegan recipe I wanted to try two different cheese versions that could be used to put in and that wouldn't melt or get burnt once you put them in the oven. So I made a ricotta style vegan cheese and also a vegan creamy cheese that can also be used for Mac 'n' Cheese.
2 Garlic cloves
LET'S GET STARTED:
Fry the onion and the garlic until they get golden and then add the spinach. Remove from the heat and mix with the vegan cheese of choice.
Cut the puff pastry into squares and add one big tablespoon of the spinach mix in the middle, close them like cones and bake for 15-20min at 180º. And enjoy!
