Extremely easy thai curry, with veggies and chicken, to make at home and on a budget, for less than £2!
You can make it vegan just by taking the chicken out, as the rest is all vegan! And for the side, you can both use rice or cauliflower rice! You can check my video if you want to know more.
This recipes on was on a budget of £3,35 in total, which makes it less than £1,60 per person!
1 Chicken breast (300g)
Coconut milk (200ml)
1 Cup of veggie broth
1/2 Celery stick
2 Garlic cloves
1 Red pepper
1tsp tomato puree (optional)
1tsp Garam Masala
Salt, pepper, steak seasoning (or garlic powder)
LET'S GET STARTED:
Start by frying the chicken with the salt, pepper and seasoning of choice until it starts getting golden and then add the onion and the garlic.
When it starts getting softer (about 2 min), add the carrot and the celery finely cut. I personally like it really small as I want it to get really soft by the end of the cooking.
Cook it for about 5 min and then add the pepper and the broccoli, followed by the coconut milk and the broth and let it boil for 10-15min depending how soft you want your veggies.
Serve with either rice or cauliflower rice and enjoy!
